Every town in the country gets to celebrate National Oyster Day today. Only one of them earned the nickname. Norwalk was the oyster capital — the biggest producer in the state and, once upon a time, the biggest fleet of steam oyster boats on the planet. So we’re not letting today pass with a regular Tuesday dispatch. Two things worth knowing: a raw-bar pop-up downtown tonight, and the big one, nine weeks out. Start with tonight.

Precious Oysters is Connecticut’s tide-to-table raw bar, run by a former oyster farmer who sources only from ocean-friendly farms and returns every shell to the Sound to seed the next bed. Tonight they set up inside Brass & Bone, the New Orleans–inspired bar, kitchen, and live-music room in South Norwalk. Fresh Connecticut oysters, Creole cooking, and a cocktail list — on the one day a year built for exactly this. If you were going to eat an oyster in this town, tonight’s the night.

Norwalk Oyster Festival 2026
Nine weeks out, the Norwalk Seaport Association throws the party the town’s whole nickname was built for. Three days on Norwalk Harbor, around 90,000 people, oysters shucked by the thousands, craft beer, tall ships, carnival rides, and free live music across multiple stages. It is the biggest weekend on the local calendar — put it in your phone now.

The dredge · Norwalk built the fleet
There’s a reason “Oyster Town” stuck. In the late 1800s Norwalk was the largest oyster producer in Connecticut and ran the biggest fleet of steam-powered oyster boats in the world. It started right here: in 1874, Norwalk captain Peter Decker bolted a steam engine onto an oyster dredge for the first time — heavier hauls, deeper water, fewer hands — and the whole industry changed overnight. The Eastern oyster that Connecticut named its official state shellfish in 1989 is the same one Precious Oysters will be shucking tonight. Tide to table, a hundred and fifty years running.
